Our third barrel project release is a long time in the making. A mixed culture golden ale, aged in combination of Chardonnay and Pinot Noir barrels for 24 months. It’s been expertly blended and then bottle conditioned with rooftop honey, made by bees living near our Port Melbourne brewery.

Tasting Points: Bright golden and assertively sour from aging with lactobacillus & pediococcus along supporting funk character from two brettanomyces strains. Honey provides balancing floral notes and a hint of perceived sweetness in this fully attenuated and complex golden wild ale.
